STEAMED FISH WITH SWEET POTATOES
2 cloves garlic, minced
1 med. onion, chopped
1 small green or red pepper, diced
1 T vegetable oil
2 med-large sweet potatoes, peeled and sliced
1/2 c white wine, fish or vegetable stock or apple juice
2 fish filets
1 plum tomato, diced
black pepper to taste
In a large skillet, saute onion and green pepper in vegetable oil. Add garlic and cook 1 minute. Top with sweet potatoes, sprinkle with black
Layer fish filets over sweet potatoes. Top with tomatoes. Pour wine over all. Sprinkle additional black pepper. Bring to boil,
then reduce heat and simmer for 12-15 minutes or until fish is flaky.
