SWEET POTATO BITES

Ingredients

2 Sweet Potatoes
3 Avocado
Salt
Pepper
Slap ya Mama seasoning
1 Lemon
cherry tomatoes
Shredded cheese (your favorite kind)


Preheat oven 350.


Slice sweet potatoes (to your desirable thickness) and place on pan.


Line pan with parchment paper or spray with a non stick spray.


Sprinkle with salt, pepper, and slap ya mama seasoning.


Bake sweet potatoes for 20-30 minutes (depending on the thickness) Turn over sweet potatoes halfway through cooking time.


Peel avocado and mash to a spreadable consistency. Squeeze the juice of one lemon and mix. Add salt and pepper.


Spread avocado mixture on sweet potatoes. Sprinkle with shredded cheese. Top with half of a cherry tomato.
