Ingredients

  • 4 medium sweet potatoes peeled then sliced or cut into ¼ inch pieces, boiled until just tender, but still a little firm.
  • ½ cup raisins
  • ¼ cup dark rum
  • 2/3 cups brown sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons water
  • ¼ cup butter

Directions

  • Preheat oven to 350 degrees. In a small bowl let the raisins soak in the rum for about 20 minutes. Grease a shallow baking pan with butter and layer sweet potato slices. In a saucepan, combine brown sugar, cinnamon, water and butter and bring to a boil. Add the raisins and rum and pour mixture over sweet potatoes. Bake uncovered for 40 minutes, basting occasionally with juices or until sweet potatoes are finished cooking.
  • *Note- I like a lot of the rum raisin sauce so I often will double that part of the recipe
  • Yields: 4-6 servings
