  • Cooking Time: 60
  • Servings: 8-10
  • Preparation Time: 15
  • 1 c flour
  • 1/2 c almond flour
  • 1 c sugar
  • 1/2 t baking soda
  • 1/2 t salt
  • 10 oz frozen strawberries, thawed and mashed
  • 1/2 c butter, melted
  • 2 eggs, beaten

DIRECTIONS

Sift flours, sugar, baking soda, and salt into a large bowl


Make a well in the center


Mix strawberries, butter, and eggs together well


Pour wet ingredients into flour mixture, mixing only enough to thoroughly combine ingredients


Pour into loaf pan


Bake at 350 degrees for 60 minutes


RECIPE BACKSTORY

This recipe stems from our family friends who own strawberry fields, and from the frozen strawberries that I always end up with because I can't finish them all while they are fresh. (I wanted to be able to make something more than smoothies with them) This bread actually called for almond extract, but in using the almond flour I think it actually makes it a little richer.
