SALMON SALAD (THINK TUNA SALAD)

Ingredients

  • 4 cans salmon, drained
  • 2 hard boiled eggs
  • 2 shallots, minced
  • 3-4 green scallions, green parts only and chopped
  • 1 tsp. lemon juice
  • 2 tbsp. mayo, or more to taste
  • salt and pepper to taste

Directions

  • Mix it all up, and add more mayo, salt/pepper to taste.

Notes

This is my mom's recipe and is really good in lieu of tuna salad or just by itself.
