Salmon Salad (think tuna salad)

Serves | Prep Time | Cook Time


4 cans salmon, drained
2 hard boiled eggs
2 shallots, minced
3-4 green scallions, green parts only and chopped
1 tsp. lemon juice
2 tbsp. mayo, or more to taste
salt and pepper to taste

Mix it all up, and add more mayo, salt/pepper to taste.

Pairs Well With


This is my mom's recipe and is really good in lieu of tuna salad or just by itself.

This really sounds good. What I always do when making salad is add a little creme fraice with the mayo, that way it is lighter.. see my shrimp salad with aspargus. I look forward to try this one out. My mom and grandmom used to make salmon salad from left overs, that was just with mayo and sour cream and a pinch of sweet paprika. Also really good on bread.
