BackstoryThis is my mom's recipe and is really good in lieu of tuna salad or just by itself.
- 4 cans salmon, drained
- 2 hard boiled eggs
- 2 shallots, minced
- 3-4 green scallions, green parts only and chopped
- 1 tsp. lemon juice
- 2 tbsp. mayo, or more to taste
- salt and pepper to taste
- Mix it all up, and add more mayo, salt/pepper to taste.
