1 tablespoon finely chopped garlic
1 finely chopped red onion
6 large tomatoes, blanched, peeled, seeded and chopped
1 large mild chile, such as Anaheim, seeded and chopped
16 oz drained, washed canned black beans
3 tablespoons chopped cilantro leaves
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 tablespoons virgin olive oil
1 diced, seeded fresh jalapeños
1 clove garlic minced
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon hot pepper sauce
Coarse sea salt and pepper to taste
Directions
Chop veggies finely and put in a large bowl. You can also process it coarsely in a food processor. Add everything else. Let stand for 30 minutes before serving.
To make a creamy version, blend in 16 oz of sour cream or add 2 large avocados, seeded and peeled (optional)
