  • 1 tablespoon finely chopped garlic
  • 1 finely chopped red onion
  • 6 large tomatoes, blanched, peeled, seeded and chopped
  • 1 large mild chile, such as Anaheim, seeded and chopped
  • 16 oz drained, washed canned black beans
  • 3 tablespoons chopped cilantro leaves
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 tablespoons virgin olive oil
  • 1 diced, seeded fresh jalapeños
  • 1 clove garlic minced
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon hot pepper sauce
  • Coarse sea salt and pepper to taste


  • Chop veggies finely and put in a large bowl. You can also process it coarsely in a food processor. Add everything else. Let stand for 30 minutes before serving.
  • To make a creamy version, blend in 16 oz of sour cream or add 2 large avocados, seeded and peeled (optional)
