SALSA SALAD
INGREDIENTS
- 6 to 8 cups Fresh Tomatoes when in season.
- or 3 to 4 cans do Diced Tomatoes, No Salt Added, do not drain
- Cilantro, raw, 1/2 cup or to taste
- Juice from 1 lime
- Olive Oil, 1 tbsp
- Vinegar, 1 tbsp
- Sea Salt, 1/2 tsp
- Sugar substitute, 2 tsp. I like Truvia
- Fresh Chives, 1/2 cup chopped
- Garlic, 3 cloves or to taste minced
- Yellow bell Pepper, 1 chopped chopped
- Red bell Pepper, 1 chopped
- Orange bell Pepper, 1 chopped
- Jalapeno Peppers, 2 seeded & diced
- Celery, raw, 1 cup, diced
- Sweet Corn, Fresh or Frozen, 1 cup
- Cumin powder, 1 tbsp or more to taste
- Black Beans, 1 cup fresh if possible
DIRECTIONS
Mix together and serve as condiment
