Salsa Salad

 


CATEGORIES

INGREDIENTS

  • 6 to 8 cups Fresh Tomatoes when in season.
  • or 3 to 4 cans do Diced Tomatoes, No Salt Added, do not drain
  • Cilantro, raw, 1/2 cup or to taste
  • Juice from 1 lime
  • Olive Oil, 1 tbsp
  • Vinegar, 1 tbsp
  • Sea Salt, 1/2 tsp
  • Sugar substitute, 2 tsp. I like Truvia
  • Fresh Chives, 1/2 cup chopped
  • Garlic, 3 cloves or to taste minced
  • Yellow bell Pepper, 1 chopped chopped
  • Red bell Pepper, 1 chopped
  • Orange bell Pepper, 1 chopped
  • Jalapeno Peppers, 2 seeded & diced
  • Celery, raw, 1 cup, diced
  • Sweet Corn, Fresh or Frozen, 1 cup
  • Cumin powder, 1 tbsp or more to taste
  • Black Beans, 1 cup fresh if possible

DIRECTIONS

Mix together and serve as condiment
