Salt and Sugar Shrimp
2 pounds shelled, deveined shrimp - tails on.
2 tablespoons kosher salt
2 tablespoons sugar
1/4 cup olive oil
3 tablespoons lemon juice
1 1/2 teaspoons minced garlic
Rinse shrimp and drain.
In a large bowl, mix salt and sugar.
Add shrimp and coat evenly.
Cover bowl and chill for 45 minutes, or for up to 2 hours.
Soak wooden skewers in water(or use metal skewers).
Rinse shrimp and lightly pat dry then add to skewers.
Lay skewers in baking dish.
Combine oil, lemon juice, and garlic then pour over shrimp, turning to coat.
Let stand about 10 minutes while heating grill.
Grill (covered grill) about 5 minutes, turning once, until pink on the outside.
