Salted Brown Sugar Peach Jam
• 2 lbs. peaches, peeled and chopped
• 1 cup brown sugar
• 3/4 tsp. salt
• 1/2 tsp. nutmeg
• juice of half a lemon
Chop the peaches quite small and mash a bit if you can. In a saucepan stir them together with the brown sugar and let sit 1 minute. Cook over med-high heat, stirring regularly, until thick - about 10-15 minutes. Pour into 2 or 3 small jars and let cool a bit, then store in the refrigerator.
Pairs Well With
This is from a book of small batch preserving. I usually make it and store the 2-3 small jars in the fridge (since I don't can). It lasts for quite a while in there.
