Salted Nut Roll Bars
1 1/2 cups flour
2/3 cup brown sugar, packed
1/2 tsp baking powder
1/4 tsp soda
1/2 cup butter, softened
1 tsp vanilla
3 to 4 cups miniature marshmallows
2/3 cup white corn syrup
1/4 cup butter (1/2 stick)
2 tsp vanilla
12 oz bag of peanut butter chips (2 cups)
2 cups Rice Krispies
2 cups salted and blanched or dry roasted peanuts
Preheat oven t 350 degrees.
Combine all crust ingredients. Spread into a 9 X 13 inch cake pan.
Bake 15 minutes. Remove from oven.
Cover with marshmallows.
Return pan to oven until marshmallows are puffy. Remove from oven and cool.
In saucepan, combine syrup, butter, vanilla, and chips. Heat until melted.
Add cereal and peanuts; mix to combine.
Spread over the cooled crust.
This cuts best if it is chilled, but does not require refrigeration after it is set.
