Satay Babi Cho Cho (pork Kebabs) - Nonja From Singapore

Ingredients

1 pound pork
1/2 coconut grated & squeezed from creme, discard pulp
1 tablespoon peanut oil
bamboo skewers
1 sereh* (lemon grass), slice white portion and discard the rest
4 Buah Keras* (candlenuts)
8 Bawang merah (shallots)
4 red chillies or according to taste,seeded
1/2 teaspoon blachan also goes under trasi* (shrimp paste)
1 teaspoon ketumbar* (coriander power)
1 teaspoon salt
2 teaspoons white sugar

1. Using a batu lesong (mortal & pestle pound together sereh, buah keras, shallots, chillies, blachan and add the ketumbar, salt and white sugar. If you don't have a mortal and pestle you can use a food processor.


2. Soak the bamboo skewers in water, which prevent the skewers from burning.


3. In a medium bowl combine all of the ingredients. With clean hands blend the meat well with all ingredients, then skewer the meat on the bamboo skewers. Grill the meat.


*These ingredients can be purchased at your local Oriental market like 99 Ranch Market or on the Internet.
