Sausage and Bean Cassoulet
2 TBSP Olive Oil
1 medium onion, chopped
1 red bell pepper, chopped
2 cloves garlic
16 oz smoked sausage
1/4 tsp dried thyme
3/4 C chicken broth
30 oz canned great northern beans, rinsed and drained
2 TBSP tomato paste
1 can Rotel tomatoes, drained (regular or hot depending on preference)
1/2 C dried breadcrumbs
Coat ovenproof skillet with olive oil and heat. Add onion, bell pepper, garlic and kielbasa and saute until onion is tender, about 3-4 minutes.
Add thyme, broth beans, tomato paste and tomatoes. Simmer for 10 minutes.
Sprinkle bread crumbs over beans. Place skillet under broiler until bread crumbs are browned, ~30 seconds.
