Sauted Spinach in Garlic
2 pounds “damp” fresh spinach, chopped into coarse pieces
2 Tbsp olive oil
2 large garlic cloves, slivered
Salt and ground pepper
1 In large sauté pan, heat olive oil, add garlic and sauté until golden; remove and drain on paper towels.
2 Heat pan again and add spinach; cover and cook just until the spinach begins to wilt (do in batches if necessary).
3 Put garlic back in and stir.
