Sauted Spinach with Garlic

INGREDIENTS

  • 2 pounds fresh spinach
  • 2 tablespoons olive oil
  • 2 large garlic cloves, finely chopped
  • 1 whole red chili pepper, finely chopped
  • Salt and ground pepper

DIRECTIONS

1. Cover and boil spinach with salt in ½-inch of water for 1 minute; drain in a colander for 10 minutes.


2. Gently press out water with a wooden spoon, and then gently cut into strips.


3. Heat the olive in a large skillet over medium-low heat; add garlic and red chili pepper and sauté a few


minutes. Add spinach and sauté, uncovered, another 5 minutes. Season with salt and pepper.
