Sauteed then Baked Cod with Asparagus, Mushrooms and Onions
Cast iron skillet
Asparagus, remove hard stems
1/2 cup Mushrooms
1/2 Sliced Onion
2-3 tablespoons Butter
1 teaspoon of Olive Oil
1/2 teaspoon Red Pepper Flakes
Marinate Cod with lemon juice for a few hours
Preheat oven 425
Sautee marinated cod with olive oil, butter and red pepper flakes for a few minutes over medium heat. Flip cod over once.
Place mushrooms around pan next to cod, make sure mushrooms are tossed in butter mixture in pan.
Place onion on top of cod
Place asparagus on top of onions
Season with salt and pepper
Wrap foil over pan
Place in oven for 10- 12 minutes

Sometimes you are inspired by the ingredients in your fridge and their expiration date. This dish was a surprisingly good use of those ingredients and I will definitely make this again!
