BackstoryThis recipe comes from one of my best friends, my Aunt Susan. When I was young, she moved away for work. So every time I would visit, she would make this spinach quiche for me for breakfast. I remember waking up to the smell of this delicious savory pie baking in the oven. I would saunter into the kitchen with a smile on my face and eagerly wait for this pie to come out of the oven.
My aunt has moved around for work since then, but the one thing that remains the same is that we always enjoy this quiche for breakfast together when I visit.
This recipe is now a staple in my house too! I love making this for my family or when company comes over or really anytime I need a simple and tasty dish to put on the table.
