SAVORY BLACK BEAN SOUP
INGREDIENTS
- 2 cans black beans, drained in colander
- 2-3 cups chicken broth
- 2 cloves mashed garlic
- 1 medium onion, chopped
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 teaspoons ground cumin
- 2 tablespoons fresh cilantro
- 1 tablespoon minced Chipotle Chile in Adobo
- 1 tablespoon fresh lemon juice
- Cajun Seasoning, to taste
- Garnishes: fresh chopped avocado, chopped cilantro, shredded Monterey Jack cheese, sour cream
DIRECTIONS
Savory black bean soup
Ingredients:
2 cans black beans, drained in colander
2-3 cups chicken broth

1 medium onion, chopped
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried oregano
2 teaspoons ground cumin
2 tablespoons fresh cilantro
1 tablespoon minced Chipotle Chile in Adobo
1 tablespoon fresh lemon juice
Cajun Seasoning, to taste
Garnishes: fresh chopped avocado, chopped cilantro, shredded Monterey Jack cheese, sour cream
Method:
Chop all herbs and place everything except for garnishes in large pot and bring to a boil — lower heat and simmer until beans and vegetables are tender. Puree with a hand blender carefully in the pot, continuing to cook for 15 to 20 minutes over low heat. Ladle into bowls and pass the garnishes at the table.
