SCALLOPS WITH COCONUT BROTH

Ingredients

  • Scallops
  • Salt/Pepper
  • Cayenne Pepper
  • Garlic Powder
  • Onion Powder
  • Vegatable Oil
  • Olive Oil
  • 2 cloves garlic
  • 1/2 cup white wine
  • 14 oz can coconut milk
  • 1 lemon grass stalk
  • 1 red chile
  • 2 green onion
  • cilantro
  • 2 thyme springs

Directions

  • Sauce:
  • cook garlic, thyme, and wine together.
  • Lower heat and add coconut milk, lemon grass, chile, green onions and seasoning
  • Season Scallops with salt, pepper, garlic powder, onion powder. Cook ~ 2-3 min on each side on hot pan.
  • Cover scallops in sauce and garnish with cilantro
