SCANDINAVIAN ALMOND BARS

  • Preparation Time: 15 minutes

Ingredients

  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp almond extract
  • sliced almonds
  • Almond Icing:
  • 1 cup sifted powdered sugar
  • 1/4 tsp almond extract
  • 3-4 tbsp milk

Directions

  • Mix together the flour, baking powder, and the salt.
  • Set aside
  • In a large mixing bowl, beat the butter until softened
  • Add the sugar
  • Beat until fluffy
  • Add to the flour mixture
  • Mix together and blend well.
  • Add the egg and almond extract.
  • Mix all together and blend well once again
  • Divide the dough into four equal parts
  • Form each one into a 12-inch roll.
  • Place two of the rolls 4 to 5 inches apart on an ungreased cookie sheet
  • Flatten the dough so it is about 3 inches aide
  • Repeat with the last two rolls
  • Brush with the milk
  • Sprinkle with sliced almonds
  • Bake at 325 F for 12 to 14 minutes
  • The edges should be slightly browned
  • Cut into 1-inch diagonal strips while the bars are still warm
  • Cool and then dirzzle with the almond icing
  • Almond Icing:
  • Stir together the powdered sugar and the almond extract
  • Add the milk to make a thin consistency
  • Drizzle over the bars
