School Lunch Peanut Butter Bars

Why I Love This Recipe

I'm not sure where this recipe came from - I've had it for years. The bars are baked in a large pan, and if you cut them small, it's a good recipe for a crowd. The combination of peanut butter and chocolate is very popular, and these make a nice addition to a platter of mixed bars.


Ingredients You'll Need

For the Bars:
1 cup sugar
1 cup brown sugar, firmly packed
1 cup butter (2 sticks), softened
1 tsp vanilla
2 eggs
2 1/2 cups creamy peanut butter (divided)
2 cups old-fashioned oats (not quick-cooking)
2 cups flour
1 tsp baking soda
1 tsp salt

For the Frosting:
1/2 cup butter (1 stick), softened
1/4 cup milk
2 tsp vanilla
3 Tbsp cocoa (rounded)
2 1/2 cups powdered sugar


Directions

Preheat oven to 350 degrees F. Grease an 18 X 13 inch jelly roll pan.


Cream sugars and butter together in large bowl.


Add vanilla, eggs, and 1 cup of the peanut butter and combine.


Add remaining ingredients and mix together.


Spread dough on prepared pan.


Bake for 15 minutes (until golden brown).


While hot, spread the other 1 1/2 cups peanut butter on top. Drop the peanut butter by teaspoon all over the bars. It will soften and make it easier to spread.


Let the pan cool until the peanut butter has firmed back up (you can put them in the fridge to hasten this).


Spread with the frosting and cut into bars.


For the Frosting:


Mix all ingredients with a hand mixer until smooth and spread on bars. (If frosting is too thin, add a little more powdered sugar; if too thick, add a bit more milk.)
