Scotch Shortbread Bars
1 c. butter (no substitutes), softened
1/2 c. confectioners' sugar
2 c. flour
1/4 tsp. baking powder
1/4 tsp. salt
additional confectioners' sugar
In mixing bowl, cream butter and sugar. Combine flour, baking powder and salt; gradually add to the creamed mixture. Spread into an ungreased 11X7X2" baking pan. Prick several times with a fork. Bake at 350º for 20-22 min. or 'til edges begin to brown. Dust with confectioners' sugar. Cool on wire rack. Cut into bars.
