Why I Love This Recipe
I like the lightness of this jello salad and prefer it to my sister's favorite cottage cheese salad! You can use any color jello that you wish.
Ingredients You'll Need
1 can crushed pineapple, 20 oz (do not use fresh)
1 box lime jello gelatin, 3 oz
8 oz cream cheese, softened
8 oz cool whip
Drain crushed pineapple. Reserve the juice. Set aside.
In a large bowl add cream cheese. Set aside.
In small sauce pan add pineapple juice and jello.
Bring to a boil while constantly stirring to dissolve the jello.
Pour dissolved jello and pineapple juice mixture over cream cheese. Using a fork break up the cream cheese and mix well.
Allow the cream cheese mixture to set up in the refrigerator for 45 minutes.
Add pineapple and cool whip. Stir together and mix well.
Store in refrigerator until ready to serve.
