SEAFOOD GUMBO

Ingredients

  • 1-1/2 lb. Peeled shrimp tails
  • 1 lb. crab meat
  • 1 lb. Fish (cut in sml. Pcs)
  • 6 cleaned crabs
  • 2 lrg. Yellow onions (chopped)
  • 4 pods garlic (chopped)
  • 1 bell pepper (chopped)
  • 1/2-cup parsley (chopped)
  • 4 green onions (chopped)
  • 3 qts. Water
  • 2 cups okra

Directions

  • Make a DARK Brown Roux
  • Add yellow onion, garlic & bell pepper to roux, sauté for 8 to 10 minutes. Slowly add 3 quarts of HOT water stir & add Tony’s to taste.
  • Cook 10 minutes more then adds crabs, crabmeat & fish.
  • Cook 45 to 60 minutes then add shrimp, parsley & green onions, and okra
  • continue cooking 25 to 30 minutes.
  • NOTE :Oysters may be added
  • thelast 5 minutes if desired.
  • OF COURSE SERVE OVER RICE WITH A LITTLE GUMBO FILE`(sassafras leaves)
  • SPRINKLED ON.
