Semur Daging - Beef cooked in soy sauce - Indonesia

Ingredients

3 pounds (1 1/2 kg) chuck or round steak
2 tablespoons vegetable oil
2 large onions, finely chopped
6 cloves garlic, minced
1/2 teaspoon salt
1 teaspoon fresh ginger, minced
1 teaspoon black pepper
1/4 teaspoon ground cardamon
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3 tablespoons Kecap manis* (Indonesian sweet soy sauce)
1 tablespoon Gula Djawa* (Palm Sugar)
2 tablespoons asam* liquid (tamarind)
1 cup hot water


Cut meat into small cubes. Heat oil in a skillet or wadjan (wok) and fry onions until soft. Add garlic, salt and ginger and fry an additional 2 minutes, stirring until onions start to color. Add meat and fry, stirring until meat loses it redness. Add spices, kecap manis, sugar, asam liiquid and water. Bring to the boil, lower heat, cover and simmer for about 1 1/2 hours or until meat is tender and gravy reduced.
