Shrimp BLT lettuce wrap
2/3 cup mayo
1/2 tsp. Dijon Mustard
1/2 tsp. Old Bay Seasoning
1/4 tsp. liquid hot-pepper sauce
1/4 tsp. salt
1 T lemon juice
1 lb. peeled, fully cooked shrimp, large, x'large your choice
1 lb. tomatoes, chopped
6 slices bacon, cooked, crumbled
3 scallions, chopped
1 head Boston lettuce, separated into leaves.
Stir together mayo, mustard, old bay, hot pepper sauce, salt and lemon juice in a large bowl. Add shrimp, tomato, bacon and scallion, toss to mix.
Cover and refrigerate for 1 hr.
Spread on 6 leaves of lettuce, roll up and place on platter.
