Shrimp Fra Diavolo
1 lb. large shrimp (15-20 per pound) peeled and deveined.
1/2 lb whole milk mozzarella cheese
2 TBS parmesan cheese
1/4 TSP dried red pepper flakes
1 cup (more if you like) home made marinara sauce
Preheat the oven to 425 degrees F.
Spray a pyrex dish with cooking spray.
Place the cleaned shrimp in one layer in the dish.
Spoon the marinara sauce evenly over the shrimp.
Carefully sprinkle the dried red pepper flakes evenly over the sauce.
Slice the cheese and place it over the surface of the sauce.
Bake for 20 minutes. Raise the oven heat to BROIL - broil the dish for 2 or 3 minutes, until the cheese is bubbly and a little browned.
Serve with steamed fresh broccoli, pasta with marinara sauce and crusty italian bread.

This is a favorite of my husband, Jim. He created the recipe when he was a bachelor; I refined it somewhat to suit our taste for a little heat with our pasta.
