SHRIMP SINIGANG
INGREDIENTS

- 1 sliced red onion
- 2 quartered tomatoes
- 1 green chili
- 100 grams tamarind pulp
- 1 cup hot water
- 8 cups shrimp stock
- mixed veggies such as green beans, sliced daikon and/or sliced Japanese eggplant
- 8 oz spinach leaves
- 24 prawns
- ¼ cup fish sauce
- 1 teaspoon sugar
DIRECTIONS
Saute onion, tomatoes and green chili 3 minutes. Stir in tamarind pulp dissolved in hot water and shrimp stock; bring to a simmer. Stir in mixed veggies; simmer 4 - 5 minutes. Add spinach; simmer 3 minutes. Add prawns; cook 3 minutes. Remove from heat; stir in fish sauce and sugar; taste and adjust seasoning.
