SHRIMP SINIGANG

Ingredients

  • 1 sliced red onion
  • 2 quartered tomatoes
  • 1 green chili
  • 100 grams tamarind pulp
  • 1 cup hot water
  • 8 cups shrimp stock
  • mixed veggies such as green beans, sliced daikon and/or sliced Japanese eggplant
  • 8 oz spinach leaves
  • 24 prawns
  • ¼ cup fish sauce
  • 1 teaspoon sugar

Directions

  • Saute onion, tomatoes and green chili 3 minutes. Stir in tamarind pulp dissolved in hot water and shrimp stock; bring to a simmer. Stir in mixed veggies; simmer 4 - 5 minutes. Add spinach; simmer 3 minutes. Add prawns; cook 3 minutes. Remove from heat; stir in fish sauce and sugar; taste and adjust seasoning.
