Shrimp W/ Basil And Mint Pesto
3/4 cups fresh mint leaves
1/2 cup fresh basil
1/4 cup pine nuts, toasted
1 garlic clove
1/4 cup evoo
2 tablespoons freshly grated parmesan
salt and pepper
2 pounds uncooked jumbo shrimp, peeled and de-veined
2 tablespoons evoo
Blend in food processor mint, basil, pine nuts, and garlic until finely chopped.
With machine running, gradually add 1/4 cup evoo until well blended. Transfer mixture to bowl. Stir in parmesan. Add salt and pepper to taste.
Toss shrimp with evoo and salt and pepper.
Heat skillet over high heat. Split batch in half and saute each until cooked through, about 3 min. Toss shrimp with pesto to coat.
