Simmered Chinese Chicken
1 whole chicken, cut up
1 Tbsp oil
1/3 cup soy sauce
1/3 cup brown sugar
1/2 cup water
1 Tbsp ketchup
1 garlic clove, pressed
Brown chicken pieces in oil, 5 minutes on each side, in Dutch oven.
Mix together remaining ingredients and pour over chicken.
Bring to a boil and simmer, covered, about 45 minutes or until chicken is no longer pink. Remove chicken and set aside.
Mix together 2 Tbsp corn starch in 1 Tbsp cold water and pour into liquid.
Stir and simmer 5 minutes or until thickened. Pour over chicken and serve with white rice.
