INGREDIENTS
- ½ C dry elbow macaroni
- 1 ½ C frozen med. sized salad shrimp, thawed
- 1 ½ C lump crab or imitation crab
- 1/3 C chopped onion
- 1/3 C chopped celery
- 1/3 C mayonnaise (fresh homemade)
- 1 Tbsp chopped fresh dill
- Salt and fresh ground pepper to taste
DIRECTIONS
Place macaroni in salted boiling water. Cook until al dente, rinse with cold water, drain, and set aside to cool.
Add in the rest of the ingredients and toss gently just until mixed.
Place in fridge for at least a couple of hours for flavors to meld.
RECIPE BACKSTORY
My mom used to make a "crab" salad, back in the day...she'd use imitation crab, mayo, celery and onion and call it done. Although I love the taste of it, I wanted to jazz it up a bit. So although I list "lump crab", I actually made this with imitation crab. But the very BEST change I made was using Shane's (CulinaryAlchemist) recipe for fresh homemade mayonnaise. It WAS well worth the effort! (thanks Shane ;) )
