Simple Smoked Trout
4 medium trout
kosher course salt
smoker of some sort
place trout on rack
rub salt inside your cleaned trout, and sprinkle on top and turn over and sprinkle
place inside your heated up smoker on bottom rack, let sit an hour before adding wood chips then add more chips each hour or 2 more times. It takes 3-4 hours depending on weather and size of trout.

Simple is always best I've learned, and this is simple! I love to make scrambled eggs the morning after smoking these as smoked trout goes amazing with cheese and eggs, I always let the trout sit in a brown bag overnight and smoke 4 at a time, it will take about 4 trout to serve 2-3 people.
