Really the only way I make trout.

Simple is always best I've learned, and this is simple! I love to make scrambled eggs the morning after smoking these as smoked trout goes amazing with cheese and eggs, I always let the trout sit in a brown bag overnight and smoke 4 at a time, it will take about 4 trout to serve 2-3 people.


  • 4 medium trout
  • kosher course salt
  • smoke chips
  • smoker of some sort


  • place trout on rack
  • rub salt inside your cleaned trout, and sprinkle on top and turn over and sprinkle
  • place inside your heated up smoker on bottom rack, let sit an hour before adding wood chips then add more chips each hour or 2 more times. It takes 3-4 hours depending on weather and size of trout.
  • That is it.
