SLOW COOKER WILD RICE WITH FRUIT AND NUTS
Slow Cooker Wild Rice with Fruit and Nuts

INGREDIENTS
- 2 cups of wild rice or wild rice blend (rinse)
- 1/2c. dried cranberries
- 1/2c. raisins
- 1/2c. dried apricots, chopped
- 1/2c. almond slivers, toasted
- 5-6c. chicken broth
- 1c. orange juice
- 2 tbsp. butter melted
- 1 tsp. cumin
- 2 green onions thinly sliced
- 2-3 tbsp. chopped parsley
- salt and pepper to taste
DIRECTIONS
Combine wild rice cranberries, raisins, apricots, and almonds in the crock pot Combine chicken stock, cumin, orange juice and butter in a medium bowl and
mix. Pour over rice cook on low for 7 hours or high for 2 1/2-3 hours. When rice is soft to the bite, add green onions, parsley and salt and pepper. Cook for 10 minutes more.
