SMOKED SAUSAGE SUPPER

Ingredients

  • 1# smoked sausage sliced
  • 1/4 c chopped green pepper
  • 1/4 c chopped onion
  • 1 small garlic clove minced
  • 1/2 tsp oregano
  • 1/4 tsp basil
  • dash of salt
  • 1 tbsp olive oil
  • 1 c V8 juice
  • 1-1/2 c hot cooked rice

Directions

  • In a large skillet saute the sausage, green pepper, onion, garlic and spices in olive oil until the vegetables are crisp-tender.
  • Add V8 juice; bring to a boil. Reduce heat; simmer uncovered for 7-8 minutes until thickened. Serve with hot rice.
