- 1# smoked sausage sliced
- 1/4 c chopped green pepper
- 1/4 c chopped onion
- 1 small garlic clove minced
- 1/2 tsp oregano
- 1/4 tsp basil
- dash of salt
- 1 tbsp olive oil
- 1 c V8 juice
- 1-1/2 c hot cooked rice
- In a large skillet saute the sausage, green pepper, onion, garlic and spices in olive oil until the vegetables are crisp-tender.
- Add V8 juice; bring to a boil. Reduce heat; simmer uncovered for 7-8 minutes until thickened. Serve with hot rice.
