Smoked Sausage and pineapple in sweet & sour sauce
1 Smoked sausage (1 lb.) cut into slices
1 can pine apple chunks
1/2 C. brown sugar
1 C. ketchup
2 T. corn starch
1 T. cider vinegar
2 T. soy sauce
2 green onions, sliced (optional)
Drain pineapple and reserve 1/2 cup of juice. Put the sliced sausage in the skillet, turn to medium.
In a bowl mix the pine apple juice and soy sauce with the corn starch with a wisk,add ketchup, vinegar and brown sugar.
Add pineapple and the sauce to the sausage and cook until sauce is thickened (it needs to boil) and everything is heated through.
Serve with hot rice if desired.
