Smoked Sausage with Penne and Veggies

Why I Love This Recipe

Ingredients You'll Need

8 oz Uncooked Penne Pasta
1 cup Green Pepper, Chopped
1/2 cup Onion, Finely Chopped
3 Tbsp Olive Oil
1 lb Smoked Sausage, Or Sausage Of Choice, Cut Into Slices
2 can Diced Tomatoes
2 Zucchini, Quartered Lengthwise & Sliced
1/2 cup Frozen Corn
1/2 cup Water
1 tsp Salt
1 tsp Basil
1 tsp Garlic, Minced
1/2 tsp Black Pepper
Parmesan, Shredded


*Cook pasta according to package directions

*Meanwhile, in a large skillet sauté green pepper and onion in oil until crisp-tender

*Add sausage, tomatoes, zucchini, corn, water, basil, garlic, and black pepper

*Bring to a boil & reduce heat; simmer uncovered 5 minutes

*Drain pasta; toss with sausage mixture and garnish with cheese

Recipe Tips

*You can leave the sausage separate for vegetarian option and don't mix with veggies if needing plain noodle option as well
