SMOTHERED CABBAGE

Ingredients

  • 2 heads cored and quartered cabbage
  • 2 medium onions
  • 1/2 lb thick sliced bacon
  • salt and pepper

Directions

  • fry bacon to medium well in deep iron skillet
  • add diced onions and simmer down approx 3-5 minutes
  • add quartered cabbage on top of bacon and onions
  • sprinkle salt and pepper over cabbage and cover skillet,
  • lower heat and simmer loosely turning cabbage periodically
  • turn off heat when cabbage is browned and wilted
