Why I Love This Recipe

My grandma always makes her apple pie for the holidays and has passed the recipe down to me and now I make it for my family. Its so good it has won a blue ribbon! Her apple pie always reminds me of family, friends and holidays. Times where we all get together. My snickerdoodles are a favorite cookie for most people, even my kids! Cookies remind me of holiday parties, or any kind of friend gathering. So I took these two recipes and formed them into one baked good. These are so delicious and will wow people at any event! The flavors meld so well together. I used my grandma's delicious apple pie crust along with my cookie and instead of making apple pie filling I simplified it and used canned apple pie filling. Hope you enjoy them as much as we do!


Ingredients You'll Need

1 Can apple pie filling(chopped small)
1 Large egg whisked (for egg wash)

Snickerdoodle Cookies

1C butter, softened
1C granulated sugar
1/4C brown sugar
1 Large egg
2tsp vanilla
2 3/4C all-purpose flour
2 1/2tsp baking powder
2 1/2tsp cinnamon
1/2tsp salt

Rolling Sugar

1/2C granulated sugar
1tsp cinnamon

Pie Crust

2C all-purpose flour
1/2tsp salt
1C cold salted butter
1/2C cold water


Directions

For Snickerdoodles:


Mix together rolling sugar and set aside. Cream butter and sugars together until nice and fluffy. Add egg and vanilla and mix well. In a separate bowl mix dry ingredients together; flour, baking powder, cinnamon and salt. Add dry to wet slowly, mix until combined. Form 1in balls and roll in rolling sugar. Makes about 2 dozen and set aside.


For Crust:


Mix together salt and flour. Cut butter into slices and add to flour, mix with hands until you have a course crumb or about pea sized pieces. Add cold water and mix again with hands until dough forms. Place on floured surface and roll out as thin as you can without it tearing, You can make it thicker if you’d like it just wont make as many little pies.


For Assembly:


Once crust is rolled out place some of your pre-made snickerdoodle balls onto dough about 2in apart, you need enough crust to warp over your cookie. Now take your thumb and push down in the middle of cookie to create a dip. Spoon in some chopped apple pie filling. Sprinkle over some of the left over rolling sugar. Cut a nice big circle around cookie and take crust and pull sides up over the top, kinda folding and making it look nice, you can use a little of your egg wash to make it stick together, then pinch top together. Cut 4 little air slits. Brush egg wash over top and sprinkle with left over rolling sugar. Bake at 400 for 12-15 min or until top has reached a nice golden color.
