1 red bell pepper
1 green bell pepper
12 aji dulce
12 garlic cloves
1 onion
6 leaves recaito
leaves from 2 stalks oregano
1 bunch cilantro
1 tablespoon black pepper
2 teaspoons salt
1/2 cup olive oil

Coarsely chop all vegetables.

Combine all ingredients except the olive oil in a food processor and process well until everything is chopped fine.

With the processor running, slowly add the olive oil until everything is well incorporated.

Called Sofrito in the Spanish Caribbean & Latin America and known as Green Seasoning in the rest of the Caribbean, this is an all purpose marinade and seasoning that is added to almost all foods.

Aji Dulce used in this recipe is a mini bell pepper used in the Caribbean. It can be found in Caribbean & Latin markets.

Recaito is a green herb, also known as culantro or shadoe beny has a flavor similar to cilantro, albeit a bit more intense. You can use extra cilantro if you cannot locate recaito.
