BackstoryThis is one of my favorite things to make, perfect when I am feeling lazy.
- 1 lb. ground beef
- 1 onion
- 1 potato
- 3 small roma tomatoes or 2 regular size tomatoes
- olive oil
- minced garlic
- Cut the onion up and brown in some olive oil. Then add some minced garlic. Add the ground beef and brown, drain oil. Then add the potato (cut up) and let that sit (covered) for 10 minutes, then add the tomatoes, they only need a couple minutes.
- Serve with rice, my favorite!
