Why I Love This Recipe


Ingredients You'll Need

2 cups long grain white rice
2 T olive oil
2 large cloves garlic, minced
1 small to medium onion, chopped
3 cups chicken broth
1 can cooked black beans, rinsed and drained
1 can yellow corn, rinsed and drained


Directions

In the olive oil, saute the onion until transparent, then saute the garlic until fragrant. Add the rice, and saute until opaque. Add the chicken broth, cover, and reduce heat to low. Simmer for about 20 minutes, or until rice is cooked. Fluff with a fork, stir in the beans and corn to heat them, then serve.


Optional garnish: chopped tomatoes and cilantro
