Sour Cream Banana Cake with Caramel Icing

  • 1/4 cup butter
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup sour cream
  • 2 bananas-ripe, mashed
  • 1/2 cup nuts, chopped
  • CARAMEL FROSTING
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup cream or evaporated milk
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla

DIRECTIONS

Cream together butter, sugar, eggs and vanilla until thick and fluffy. Sift together four, baking powder, baking soda and salt. Add dry ingredients to the creamed mixture alternately with the sour cream then add bananas and buts. Turn into a buttered baking dish 13x9x2". Bake for 350 degrees for 35-40 minutes in a pre-heated 350 degree oven. Test with a toothpick inserted to make sure it comes out clean.



For frosting: Bring, butter, brown sugar and milk to a boil stirring constantly. Remove from heat and cool mixture until just warm to touch. Beat in powdered sugar and vanilla until smooth. Spread over cooled cake.

Tried this cake tonight Kathy, it was awesome! I had to substitute veggie oil for the butter because I was out. I also made a pineapple cream cheese frosting (again, outta buttah) It was a perfect combo tho!
