Moist and tender, this is easy to bake and disappears quickly


  • 1/2 cup sourdough starter
  • 3 tablespoons unsalted butter, softened
  • 1/2 cup wholemeal cornmeal
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder


  • Preheat the oven to 350 F. Coat a 9-inch round baking pan with cooking spray. Whisk together the wet ingredients in a small bowl or measuring cup. Whisk together the dry ingredients in a medium mixing bowl. Stir the wet ingredients into the dry ingredients just until mixed. Transfer batter to the baking pan and bake at 350 F. for 25 minutes or until a toothpick inserted in the center comes out clean
