Southern Purple-hull Peas

Ingredients

1 lb. dried purple-hull peas
2 quarts water
3 slices of bacon
salt and pepper to taste
1 Tbsp Tony's seasoning (Optional)


Wash peas and soak overnight in cold water. Drain. Put peas in large pot with 2 qts. water. Add bacon. Simmer for about 2 hrs. or until peas are tender. Add water if needed while cooking.
