- 1 lb. dried purple-hull peas
- 2 quarts water
- 3 slices of bacon
- salt and pepper to taste
- 1 Tbsp Tony's seasoning (Optional)
- Wash peas and soak overnight in cold water. Drain. Put peas in large pot with 2 qts. water. Add bacon. Simmer for about 2 hrs. or until peas are tender. Add water if needed while cooking.
