Fantastic on Tostitos or wheat thins. It's very colorful, and is pretty much fat free if you use fat free or reduced fat Italian dressing. The 2 cans of Rotel can be substituted by 2 cans of diced tomatoes with jalapenos. If you feel like the "trouble" you can substitute the Rotel with 2 diced tomatoes and a chopped jalapeno.


  • 1 can black eyed peas
  • 1 can black beans
  • 1 can whole kernel corn
  • 2 cans of Rotel (mild or regular)
  • 1 C. chopped red onion
  • 1 C. Italian dressing


  • Drain everything, combine, and stir. That's it!
