Southern Fried Okra
1 pound okra pods, cut into ½” pieces
2 eggs, beaten
½ tsp salt
½ tsp pepper
1½ cups cornmeal
¼ cup oil
¼ cup bacon grease
1 Soak okra in egg for 30 minutes, stirring often.
2 In a separate bowl, combine cornmeal, salt, and pepper.
3 Place cornmeal mixture into gallon‐size Ziploc, add okra, and shake well to coat.
4 Heat oil and bacon grease in a large skillet over medium‐high heat; carefully place okra in hot oil, after shaking off excess cornmeal, stirring occasionally.
5 Reduce to medium heat when okra starts to brown; cook a few more minutes or until done, drain on paper towels.
