Southern Pecan Pie
1 purchased pie crust or homemade
3 eggs. slightly beaten
1 cup. Corn Syrup
2/3 cup. Sugar, divided use
1/3 cup. Butter, melted
1 tsp. Vanilla Extract
1 1/4 cup. Pecan Halves
Pre-Heat oven to 350.
Prepare purchased crust or roll out pastry for Single-Crust Pie, line a 9 inch pie plate with the pastry.
For the filling, combine eggs, corn syrup, sugar, butter, and vanilla.
Mix well and stir in pecan halves.
Place the pastry lined plate on the oven rack.
Carefully, pour the filling into the pastry shell.
To prevent browning, cover edge of the pie with foil.
Bake for 45 mins.
Pie is ready when a knife comes out clean.
Cool on a wire rack.
Cover and Refrigerate within 2 hours.
