Southern Style Black eyed Peas
1 lb dried black eye peas
1/2 medium onion, diced
1 medium carrot, thinly sliced
1 serrano pepper, seeded and thinly sliced (optional)
4 oz smoke flavored lean ham, diced
5 c water
Crock pot directions: Rinse peas under cold running water
Place all ingredients in crock pot
Cook on low seting 8-10 hours or until peas are tender.
Stove Top Directions: Rinse peas under cold running water.
Place all ingredients in a large saucepan or Dutch oven
Add two additional cups of water
Bring to a boil and skim off any foam.
Reduce heat to medium low
cover and simmer 2 hours
