Southwest Egg Casserole
1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
4 cups shredded Monterey Jack cheese
2 cups cottage cheese
1/2 cup butter or margarine, melted
2 (4 ounce) cans chopped green chilies
In a large bowl, beat eggs.
Combine flour, baking powder and salt; stir into eggs (batter will be lumpy).
Add cheeses, butter and chiles.
Pour into a greased 13-in. x 9-in. x 2-in. baking dish.
Bake, uncovered, at 350 degrees F for 30-40 minutes or until a knife inserted near the center comes out clean.
Let stand 5 minutes before cutting.
