4 chicken breasts
15 oz canned black beans
2 - 4 slices of pepper jack or monterey jack cheese
your choice of oil or spray oil
Heat oil in a large skillet over medium heat. Trim all visible fat from chops or chicken and season to taste. Brown meat in oil.
With 5-10 minutes left add can of black beans to skillet and reduce heat to medium low. Cook until beans are warmed. Continue turning meat
occasionally to insure even cooking.
Top chicken with slices of cheese with 2-3 minutes left to cook meat. If using 2 slices half cheese and place 1 half on each breast. If using 4 slices half cheese and layer breasts so they are covered by the cheese.
Top with a dollop of sour cream. Serve!
Light or non-fat versions of the sour cream & cheese can be used. I use them. Also, I put a full slice of cheese on DH's and only a half slice
on mine, which is the reason I said 2-4 slices. It depends on how cheesy you like it. This tastes a LOT like Southwestern Chicken at Texas Roadhouse, which was my inspiration.
