SOUTHWESTERN RICE & BLACK BEANS

Ingredients

  • 1-2 T. Olive Oil
  • 1/4 C. Red Onion chopped
  • 1/2 Green Pepper, chopped
  • 4-6 Roma Tomatoes, chopped
  • 2 cloves Garlic, minced
  • 1 can Black Beans, drain & rinse
  • 1 - 4.5 oz. can Green Chilies
  • 1-1/4 t. Cajun Seasoning (I used 1/2 t. Cumin, 1/4 t. Corriander and 1/2 t. Chili Powder)
  • Black Pepper to taste
  • Jalapeno to taste, chopped (optional)
  • 1 C. Cooked Brown Rice
  • 1/2 C. Chicken Broth (bouillion & water)

Directions

  • Directions:
  • Saute onion & green pepper in olive oil til tender in large sauce pan. Add garlic & tomatoe and saute for 5 more minutes. Add beans, green chilies, seasonings, jalepeno, rice and chicken broth and saute until everything is hot... Enjoy! This was so yummy!
